Manifesto
On the edge,
where the Karst meets the Adriatic sea
1.
We believe in the land before the cellar.
Wine is born among dry-stone walls, saline winds, and red, fragile stone.
Each bottle carries a place — not a formula.
2.
We grow small to think big.
Our vineyard is tiny. Our production limited.
But every gesture is vast: a choice, never a constraint.
3.
We don’t measure time. We listen to it.
Macerations, fermentations, ageing:
they are dialogues between grape and silence, not numbers.
4.
The hand matters more than the machine.
Terraces cannot be commanded — only respected.
Every vine, every cluster, every stone is touched, lifted, understood.
5.
Imperfection is beauty, when it is true.
We accept nature when it surprises us.
We never force what the land does not wish to give.
6.
Natural wine is not a trend. It is a responsibility.
Indigenous yeasts, minimal intervention, total transparency.
Purity is not declared — it is protected.
7.
A vineyard is also a garden of the soul.
Among herbs, vegetables, bees and wind, we cultivate an ecosystem
that speaks the languages of stone, sea, and memory.
8.
Every bottle is an act of courage.
Producing very little in a harsh land is a radical choice.
Great wines are born from difficulty.
9.
Hospitality is a promise.
Whoever enters our vineyard enters our intimacy.
To taste our wine is to share a piece of our destiny.
10.
Wine is memory.
Of who we are, where we come from, and what we will leave behind.
Every vintage is a chapter. We are only its temporary guardians.
11.
We do not make wine for everyone.
We make wine for those who seek.
For those who slow down. For those who listen. For those who understand detail.
12.
Here, on the edge, wine is not a product.
It is liquid landscape.
A territory poured into a glass.
A story that refuses to be forgotten.
Wine of wind, stone and sea.
