Our Wines
Klin is first and foremost a place — but above all,
it is Katrin Štoka.
Born in 1985, Katrin farms steep, terraced vineyards overlooking the Gulf of Trieste|Trst|Triest, where viticulture is entirely manual and often heroic. Tractors cannot enter these slopes: every treatment, every harvest and every decision is made by hand.
The vineyards are organically farmed, following natural principles and deep respect for the land. Fermentations start spontaneously with indigenous yeasts, without temperature control. When used, skin contact begins in open wooden vats. Wines age in stainless steel tanks to preserve clarity and precision, with minimal or no added sulfites and are neither fined nor filtered.
These are wines shaped by landscape, grape varieties and intuition — not by technology or oak. Once in the bottle, what you taste is the wine itself.
Not every wine is produced every year. Each cuvée exists only when the season allows it, in respect with the vintage and the vineyards.
Jess

Lightly macerated Pet-Nat — 12%
No added sulfites
JESS is our lightly macerated Pet-Nat, the ancestral father of Prosecco. Made using the ancestral method — bottled before the first fermentation is complete — from local varieties: Malvazija, Vitovska and Glera.
Three days of skin contact give the wine texture and personality. A natural sediment may be present: gently shake before serving if desired. Katrin defines it as punk — and it is.
Deep straw yellow in color, it shows aromas of apple, aromatic herbs and citrus zest. On the palate it is fresh yet full, vibrant and expressive, with an unmistakable sense of place.
Fresh, lively and territorial.
Food pairing: aperitifs, starters, pasta dishes, white meats — or simply as a wine of curiosity.
Mira el Mar

Traditional Method Brut Nature — 12%
MIRA EL MAR, “look at the sea” in Spanish, takes its name from the Miramare Castle, visible from our terraced vineyards overlooking the Gulf of Trieste.
A traditional-method sparkling wine made from Malvazija, Vitovska and Glera, with at least 12 months on the lees. A short maceration of three days gives structure and depth to this elegant Brut Nature.
Intense straw yellow tending toward gold. Notes of almond and hazelnut lead into chamomile and Mediterranean herbs. The palate is clear and refined, lifted by a very fine bubble, with a long, gently toasted finish.
Our most traditional and elegant wine: balanced and quietly refined.
Food pairing: aperitif, appetizers, seafood, shellfish, light first courses.
Klin Panter

Still Rosé from Refosco — 11%
KLIN PANTER is our still rosé made from Refosco grown in the Karst (Carso), outside the Breg area. A very short maceration — less than 30 minutes — preserves freshness and vibrant color.
Bright and lively in the glass, it is fruit-driven, clean and energetic, with a refreshing and straightforward character.
A versatile rosé that brings color and vitality without losing identity.
Food pairing: from aperitif to fish dishes and white meats.
Viktor

Orange wine — 11.5%
VIKTOR is Katrin’s wine of the heart — the first wine of the winery and the purest expression of her vision.
A blend of Malvazija, Vitovska and Chardonnay, with eight days of skin contact. About a quarter of the grapes ferment whole cluster, including stems, adding subtle woody and spicy nuances.
Golden yellow in color, dry and complex, with aromas of apple, vanilla, ripe peach, rosemary, bitter almond and mineral notes. The palate is rich and genuine, fresh yet balanced by softness, with a fine and pleasant tannic grip.
An orange wine of depth and personality, both generous and precise.
Food pairing: fish stews, vegetable risotto, duck or rabbit with roasted vegetables, pork dishes.
Viola

Red wine from Merlot and Refosco — 13%
VIOLA is our full-bodied red made from Merlot and Refosco, with eight days of maceration.
Deep and intense in style, it is soft yet structured, with warmth, balance and depth. A wine that combines elegance with strength, never heavy, always composed.
Food pairing: red meats, braised dishes, rich and structured cuisine.
Klin wines are not designed to impress.
